Wegański Key Lime Pie (bez orzechów)/ Vegan Key Lime Pie (No nuts)


Odkąd porzuciłam nabiał (jajka wciąż jem, ale chciałam tutaj pokazać koleżance, że da się smacznie jeść 100% roślinnie), ale nie porzuciłam wypieków, odkryłam całkiem nową paletę smaków. To ciasto na pewno jeszcze upiekę z kilkoma poprawkami. Nie będę Wam wciskać kitu, że ta tarta smakuje identycznie jak klasyczny Key Lime Pie. Jest równie dobra, ale w inny sposób. Na pewno powoduje mniej wyrzutów sumienia, choć cukru w niej nie brakuje.
 Szukałam przepisu na wielu blogach, ale wszędzie albo należało dodać zmielone orzechy nerkowca (mój blender by chyba nie dał rady, poza tym to nie są najtańsze orzechy...) albo awokado, którego akurat nie miałam w domu, zaadaptowałam więc przepis na sernik.
 A jak zwykle najlepsza część polega na zachęceniu gości do zgadnięcia z czego zrobiona jest beza. Moja znajoma po kilku próbach od niechcenia rzuciła "cieciorka" i oczy urosły jej jak u sowy, gdy powiedziałam "Tak!". Wodę z puszki cieciorki chciałam wypróbować już od dawna i muszę stwierdzić, że jestem pod wrażeniem. Zachowuje się jak normalne białko z jedyną różnicą, że nie ścina się pod wpływem gorącego syropu cukrowego, tak więc tartę najlepiej podać w dniu przygotowaniu (choć przetrwa w lodówce do dnia następnego). Zaintrygowani? No to do dzieła! :)

Since I abandoned all dairy products (I still eat eggs but I wanted to show to a friend that you can do everything 100% vegan) but I kept baking, I've discovered a whole new palette of flavours. I am sure I will bake this cake again with a few adjustments. I will not bullshit you and tell that the taste is identical as in the classic Key Lime Pie. It's also very good but in a different way. It causes less guilt for sure even if there is a lot of sugar in it!
 I was looking for a recipe on many vegan blogs but in almost every recipe, there were blended cashews nuts (I don't think my blender would survive the operation and morever they are quite expensive) or avocado which I didn't have at home. I just used a recipe for a cheesecake.
 The best part is when you serve the cake and ask your guests to guess what is in the meringue. My friend gave up quite quickly and just for fun she said "chickpeas". Her eyes became round as plates when I told her "Yep!". I wanted to try aquafaba (the liquid in the chickpeas jar) for a long time and I must say, I am very impressed. It behaves as a classic egg white although it doesn't coagulate when you add a hot sugar syrup. This is why it's better to serve the cake on the same day as you prepared it (although it can easily survive in the fridge till the next day). Are you intrigued? Let's bake! :)


Składniki:/ Ingredients:
 Spód:/Base:
- 100 g mąki/ 100 g flour
- 50 g migdałów w proszku / 50 g almonds in powder
- 3 łyżki rozpuszczonego oleju kokosowego / 3 tbsp molten coconut oil
- 5 łyżek syropu z agawy / 5 tbsp agave syrup

Masa:/Batter:
- 400 g miękkiego tofu / 400 g silken tofu
- puszka mleka kokosowego / 1 can coconut milk
- 3/4 szklanki ugotowanej kaszy jaglanej / 3/4 cup cooked millet
- sok z dwóch limonek (następnym razem dam więcej, przynajmniej 3 albo 4!) / juice squized out of 2 limes (next time I will take even more - 3 or 4!)
- cukier/syrop z agawy do smaku (nie żałować!)/ sugar/agave syrup to sweeten
- 2 łyżeczki mąki ziemniaczanej (zapomniałam i bałam się, że ciasto mi się nie zetnie, dało radę, ale na wszelki wypadek lepiej dodać) / 2 tsp potato starch (I forgot about this one and I was freaking out that the cake would not set. It was fine but I recommend adding the starch nevertheless)
- skórka starta z dwóch limonek / grated lime zest of 2 limes

Beza włoska:/ Italian meringue:
- 100 mL wody po cieciorce w puszce (gdzieś wyczytałam, że żeby beza była gęściejsza, należy tę wodę gotować, aż połowa wody wyparuje i wystudzić - warte rozważenia)/ 100 mL aquafaba (I read somewhere that if you want a denser meringue it's better to boil this liquid till you obtain half of the volume - it's worth a try!)
- 150 g cukru + 50 mL wody/ 150 g sugar + 50 mL water
- łyżeczka soku z cytryny/ 1tsp lemon juice
- ekstrakt z wanilii (by na wszelki wypadek przytłumić zapach aromat cieciorki)/ vanilla extract (in case the chickpea smell is too strong)


Składniki na spód wymieszać razem aż do otrzymania jednolitego ciasta (można dodać odrobinę wody, jeśli ciasto jest za gęste). Wyłożyć nim spód formy, nakłuć widelcem i piec przez 5 minut w 180 stopniach.
 Mix the ingredients for the base till combined (you can add a little bit of water if the dough is too dense). Cover the base of the pan with the dough, make some holes with a fork and bake for 5 minutes in 180 C.

Składniki na ciasto zmiksować razem blenderem aż do uzyskania jednolitej masy. Dosłodzić w razie potrzeby. Wyłożyć gotową masę na lekko przestudzony spód i piec przez ok.godzinę w 180 stopniach. Ja piekłam z kąpielą wodną, ale nie sądzę, by było to konieczne. Jeśli ciasto za bardzo się rumieni z wierzchu podczas pieczenia, przykryć folią.
 Wystudzić,  po czym wsadzić do lodówki na kilka godzin. Mi z foremki wypływała trochę woda, ale mam nadzieję, że dodatek mąki ziemniaczanej pomoże.

With a blender, mix all the ingredients for the batter. Taste the batter and add more sugar if necessary. Put the batter on the slightly cooled down base and bake it for around 1h in 180 C. I was baking in water bath but I don't think it's necessary. If the cake starts to burn from the top during baking, cover it with aluminium foil.
 Let the cake cool down and then put it to the fridge for a few hours. I had a lot of water escaping from the pan but I hope adding potato starch would help!

Przygotować bezę. Wlać wodę z cieciorki do miski miksera wraz z sokiem z cytryny i ubijać aż do otrzymania sztywnej piany (zajmuje to kilka minut, więcej niż białka, ale mniej niż się spodziewałam patrząc na inne blogi). Można dodać wanilię. W międzyczasie przygotować syrop cukrowy - cukier i wodę wymieszać i gotować aż osiągnie temperaturę 118 stopni (używam termometru cukierniczego). Do sztywno ubitej wody po cieciorce wlać syrop, wciąż ubijając i kontynuować, aż beza się wychłodzi.
Ciasto ostrożnie oddziel od brzegów formy i udekoruj przygotowaną bezą za pomocą rękawa cukierniczego (po tej operacji pozostało mi wciąż mnóstwo bezy, można ją wysuszyć ;)).

Prepare the meringue. Beat the aquafaba with lemon juice till stiff peaks (it took me a few minutes, more than egg whites and less than I expected looking at other blogs though). You can add the vanilla extract. In the meantime, make the syrup with water and sugar and boil it till it reaches 118C (I am using a thermometer). Pour the hot syrup to the aquafaba stiff peaks still beating it and continue beating till the meringue is cold.
 Separate the borders of the cake from the pan using a knife, carefully take it out and decorate with the meringue using a confectionery bag (I still had a lot of meringue left after, you can make small meringues with it!).

Tofurnik chałwowy / Tofu halva cheesecake



Skończyłam! Skończyłam szkołę, pożegnałam się z egzaminami, siedzeniem w ławce i wyczekiwaniem do przerwy. Nawet jeśli zdecyduję się kontynuować studia, to na pewno nie będzie to tak wyglądać ;)
  Przed kolejnym stażem mam chwilę oddechu, więc postaram się więcej pisać na blogu. Wracam z tym wegańskim przepisem na sernik chałwowy. Od prawie miesiąca gotuję bez mięsa i nabiału. Nie zdawałam sobie sprawy, jak ciężkie mają życie weganie, gdy chcą zjeść coś na mieście! Masło, ser, śmietana są wszędzie! Podziwiam ich. Mi samej jest ciężko, a przecież nie wykluczyłam z diety jajek czy ryb.
  Ten sernik nie jest ideałem sernikowym, ale jest na tyle dobry, że zniknął w jeden dzień. Zaskakuje w smaku. Myślę, że to mogłaby być całkiem zdrowa propozycją na wielkanocnym stole! :)

I am done! I've finished my school and I've said bye to exams, classes and waiting for breaktime. Even if I decide to continue my studies, they will not look like this :)
I have a few days of holiday before my next placement so I will try to write more on the blog. I am back with a new vegan recipe for a tofu halva cheesecake. I've been cooking no meat or no dairy for the past month and I realised how painful is eating out when you are a vegan. Butter, cheese, cream are everywhere! I admire vegans. It's already hard for me even if I eat eggs and fish.

 It's not THE perfect cheesecake but it's so good that it disappeared in one day only. The taste is very intruging. I think that it may be a very healthy proposition for Easter! :)

Składniki:/ Ingredients:
spód/base:
- 15 odpestkownych daktyli zalanych wrzątkiem i moczonych przez kilka minut/ 15 dates without pits covered with boiling water and left for a few minutes
- 4 łyżki otrąb owsianych/ 4 tbsp oatmeal

masa/batter:
 - 400 g tofu (ja miałam pół bardzo miękkiego i pół bardzo twardego, polecam tylko to miękkie)/ 400 g tofu (I used soft tofu mixed with harder tofu but I recommend the soft one)
- szklanka tahini/ 1 cup tahini
- 2 łyżeczki mąki ziemniaczanej / 2 teaspoons potato starch
- syrop z agawy/cukier do dosłodzenia (ja dałam ok. 5 łyżek syropu i później dosładzałam cukrem do smaku) / agava syrup/sugar (I used 5 tbsp of agava syrup, tried the batter and then added some more sugar)

polewa/icing:
 - 8 daktyli przygotowanych w ten sam sposób jak na spód/ 8 dates prepared the same way as in the base
- łyżka kakao/ 1 tbsp cocoa

Daktyle na spód odcedzamy i blendujemy z otrębami. Wykładamy nimi dno formy (u mnie 19 cm średnicy) i podpiekamy przez ok.5 minut w 180 stopniach.
 Wszystkie składniki na masę blendujemy razem aż do otrzymania gładkiej konsystencji. Przelewamy na podpieczony spód i pieczemy przez ok. 40 minut w 180 stopniach.
 Studzimy przez kilka godzin, oddzielamy od formy i smarujemy wierzch polewą przygotowaną ze zblendowanych daktyli i kakao.
 Smacznego!

Blend the drained dates and oatmeals. Put them at the bottom of your pan (mine was 19cm diameter) and bake for 5 minutes in 180 C.
 In the meantime, blend all the ingredients for the batter together till smooth. Transfer on the top of the base and bake for around 40 minutes in 180C.
 Let the cake cool down for a few hours, carefully take the sides of the pan off and put the icing on the top made with blended dates with cocoa.
