Buche de Noel - cytryna i czekolada/ Buche de Noel - lemon & chocolate


Uwielbiam oglądać we Francji "Le meilleur patissier" /najlepszy cukiernik/ i na koniec każdego sezonu jednym z zadań finałowych jest zrobienie buche de Noel po polsku zwanym polanem bożonarodzeniowym. Nigdy nie miałam okazji spróbować buche de Noel, bo trzeba by jednak zakupić całe ciasto, ale tegorocznym wyzwaniem bożonarodzeniowym było dla mnie upieczenie/zrobienie buche. Zdecydowałam się na smaki, które uwielbiam czyli czekoladę i cytryny. Żaden przepis mi się całkowicie nie podobał, więc każdy element buche jest wzięty z innego, taka moja własna kompilacja.
Podane proporcje wystarczyły mi na buche widoczną na zdjęciu (ok.25 cm), zrobioną w specjalnej formie, plus płaską buche w keksówce o długości 25 cm. Nie martwcie się, specjalna forma nie jest niezbędna, keksówka świetnie się sprawdziła!

I love watching "Le meilleur patissier" /Masterchef pastry edition?/ in France and at the end of each season, the final task consists in making "buche de Noel", the traditional French Xmas dessert. I have never tried Buche in France because I would need to buy the entire cake but my challenge for this year was to make one! I decided to mix my favourite flavours - chocolate and lemon. I didn't find any recipe which convinced me from A to Z so every single element of this recipe is a compilation from different ones.
The proportions are enough for the buche you can see on the picture above (around 25 cm) made in a special mold for "buche" plus a very flat buche in a mold for cakes. Don't worry, the special mold is not necessary, you can just use a cake mold!


Składniki:/ Ingredients:
Cytrynowy wkład/ Lemon inside:
- 3 cytryny/ 3 lemons
- 225 g cukru/ 225 g sugar
- 3 żółtka (białka zostawić do dacquoise) + jajko/ 3 egg yolks (whites are going to be used for the dacquoise) + 1 egg
- 3 łyżeczki mąki ziemniaczanej/ 3 tbsp potato or corn starch
- 12 g żelatyny / 12 g of gelatin

Dacquoise (biszkopt orzechowy)/Dacquoise:
100 g białek (u mnie równo 3 białka) / 100 g egg whites (perfectly 3 egg whites in my case)
60 g cukru/ 60 g sugar
15 g mąki ziemniaczanej/ 15 g potato starch (or corn)
75 g zmielonych orzechów włoskich (lub innych) i garstka posiekanych orzechów/ 75 g grinded hazelnut (or other) and a handful of chopped hazelnuts

Mus czekoladowy/ Chocolate mousse:
220 g ciemnej czekolady/ 220 g dark chocolate
120 mL mleka/ 120 mL milk
6 g żelatyny/6 g gelatin
360 mL śmietany kremówki/ 360 mL heavy cream

Lustrzana polewa/ Mirror looking like icing
80 g wody/ 80g water
230 g cukru/ 230 g sugar
12 g żelatyny/ 12 g gelatin
60 g kakao/ 60 g cocoa powder
150 mL śmietanki/ 150 mL heavy cream

Robimy cytrynowy środek. Żelatynę zalewamy odrobiną wody do napęcznienia. Z cytryn wyciskamy sok i mieszamy w małym garnku z resztą składników poza żelatyną. Stawiamy garnek na małym ogniu i ciągle mieszając, gotujemy aż do zgęstnienia. Żelatynę topimy przez kilka sekund w mikrofali na minimalnej mocy bądź od razu dodajemy do gorącej cytrynowej mieszanki i mieszamy aż do połączenia. Keksówkę o podobnej długości co forma do Buche wykładamy plastikową folią i przelewamy gotową mieszankę. Wstawiamy do lodówki na kilka godzin aż stężeje. Kroimy wzdłuż na dwa (w moim przypadku, gdyż przygotowywałam dwie buche).

Make the lemon inside. Cover gelatin with a few tbsp of water and let it soak. Squeeze the lemon juice from the lemons and mix with the rest of ingredients except for gelatin. Transfer everything to a pan and put it on a small heat. Cook till it starts boiling and becomes very dense. Melt the gelatin in the microwave (no more than 15 seconds in 200 W) or just add it directly to the hot mix. Whisk till the gelatin is incorporated. Cover the cake mold which is the same lenght or slightly shorter than the mold for your buche with wrapping plastic and transfer the lemon jelly. Put to the fridge for a few hours till it's set. Cut along into two (in my case cause I was making 2 buches).

 Przygotowujemy biszkopt orzechowy. Białka ubijamy na sztywną pianę, dodajemy cukier i ubijamy, aż się rozpuści. Dodajemy mąkę i zmielone orzechy i delikatnie mieszamy szpatułką, by nie złamać struktury białek. Wykładamy i rozprowadzamy po blasze wyłożonej papierem do pieczenia. Posypujemy równomiernie posiekanymi orzechami i pieczemy przez 20 minut w 170 stopniach.

Make the dacquoise. Beat the whites till soft peaks then add sugar and beat till incorporated. Add the nut powder and starch and then mix gently. Spread on a baking sheet covered with baking paper and then sprinkle evenly cut nuts on the top. Bake in 170C for 20 minutes.





Przygotowujemy mus. Czekoladę rozpuszczamy w mleku (robiłam to w mikrofali), dodajemy namoczoną i rozpuszczoną tak jak w przypadku cytrynowego środka żelatynę i mieszamy, aż do uzyskania gładkiej konsystencji. Zostawiamy do ostygnięcia (temperatura pokojowa). Bardzo zimną kremówkę ubijamy aż do otrzymania bitej śmietany. Dodajemy rozpuszczoną i wystudzoną czekoladę z żelatyną i bardzo delikatnie mieszamy szpatułką aż do połączenia.

Prepare the chocolate mousse. Melt the chocolate in milk (I did it in microwave) then add the gelatin soaked and melted in water in the same way as in the lemon inside, mix till getting a very smooth chocolate sauce. Let it cool down till room temperature. Whip very cold heavy cream till it's thick. Add the chocolate with gelatin and incorporate very gently using a spatula.

Składamy buche. Wykładamy formę na buche plastikową folią. Wykładamy część musu, wkładamy cytrynowy środek (patrz zdjęcie poniżej) i przykrywamy resztą musu. Z biszkoptu wycinamy kawałek o wymiarach środka foremki (musi się całkowicie zmieścić na wierzchu) i dajemy go na wierzch, dociskając lekko do musu. Wkładamy do zamrażarnika na conajmniej 6 godzin, a nawet całą noc.

Put the buche together. Cover the mold for buche with wrapping plastic. Put a part of the chocolate mousse on the bottom, place the lemon inside (like on the picture) and then cover it with the mousse. Cut the dacquoise to get a rectangle which will cover the mousse and place it on the top, slightly pressing against the mousse. Put to the freezer for at least 6 hours or even better - for the whole night.
 Przygotowujemy polewę. Wszystkie składniki prócz żelatyny gotujemy razem przez minutę. Dodajemy rozpuszczoną w mikrofali żelatynę i mieszamy do otrzymania gładkiej konsystencji. Studzimy do 35 stopni.
 Prepare the icing. Boil all the ingredients except for the gelatin together for one minute and take away from the heat. Add the gelatin melted in the microwave and mix till getting a smooth structure. Let it cool down till 35 C.

Wyjmujemy zmrożoną buche z formy, ciągnąc za folię i układamy biszkoptem do dołu.
Take the buche out of the mold using the foil and place it with the biscuit on the bottom.

Kładziemy zmrożoną buche na kratkę i  polewamy letnią polewą (ja zrobiłam to dwa razy, zebrałam polewę z podstawionego talerza i polałam po raz drugi, by ładniej ją pokryć). Wkładamy do lodówki do zastygnięcia i dekorujemy wedle uznania.

Put the frozen buche on the grill sheet and pour the icing on the top (I did it twice to cover it better, I just reused the icing from the plate I put under the buche). Put to the fridge till the icing is set and then decorate.


To nie jest łatwy przepis i z góry przepraszam, jeśli jest coś niejasnego. Chętnie odpowiem na wszelkie pytania!
